First and foremost, let me say I am profoundly sorry for your loss!
For the leftovers, for the ham and turkey, could measure them in individual portions, put them in a zip lock bag and throw them in the freezer, to be used in recipes (soup comes to mind) or heated up for a quick protein part of a meal...as for the fried chicken, could you freeze that as well and take it out when you have folks over sometime??
