What kinds of seasonings are you using on the fish?
I love roasted veggies and orzo pasta...toss sliced veggies (I usually use carrots, peppers, and mushrooms - you could also use zucchini, squash, onions...really, anything you like) with olive oil and seasonings (Italian seasonings, garlic, pepper, and salt). Spread on a foil-lined baking sheet and bake at 450 for 10 minutes, stir, and then for another 10 minutes. Meanwhile, cook the orzo and when everything's finished, toss them together. The veggies would be great on their own if you didn't want the pasta, of course.
