marinated mushrooms, marinated artichoke hearts, cherry peppers in vinegar, kalamata olives, slices of pickle, hard boiled egg, tabouli, hummus. These are some items I add along with regular salad greens/veggies.
Check your local farmer's markets for farm fresh veggies. I think you'll find your salads much tastier if you use fresher ingredients. I LOVE farm fresh carrots. Don't like conventional carrots anymore. there really is a difference in the taste.

I know this sounds crazy, I like to add some trail mix for the texture to top my salads! Since I prefer crunchy- chopped walnuts or pecans/ peanuts, toasted oatmeal, frozen peas, chopped celery, Sometimes I skip the dressing and add a little course ground pepper and lemon juice.

(rare instances of) crispy rice noodles finely diced meats leftover strips of meat those teeny-bitty canned shrimp a few sliced grapes a tiny amount of raisins occasionally (dark or golden) diced apples (again, small amount)

My fave changes daily, lol. Today's toppings mixed well with shredded lettuce:
tomato homemade mayo onion, mustard raw shrimp

I have fat free croutons, turkey bacon bits, veggie dried bits, sunflower seeds, feta cheese crumbles, Colby jack cheese sticks that you cut pieces off of, and good old roast chicken pieces, etc. canned beets cut up, artichoke hearts cut up. You know the drill though, with salads, day in and day out, they might still get old. My son works 12 hr. shifts, he baked chicken pieces and takes some along every night. Also does chocolate protein shake for snack/meal, fast and easy when things get busy. Take cole slaw for a change of pace. Or fruit salad with pineapple and mandarin oranges.
I also work 12 hr shifts. When I can't sit down for a full meal. I use protein bars. For salads I add more vegies like broccoli, cauliflower, carrots. I also add olives

Hey Guys! I'm starting back to work after mat leave, I'm a nurse that does 12 hr shift work. I don't want to do vending machines or cafeteria so I'm brainstorming food ideas to bring. What I want to do is make a salad for either my lunch or dinner meal. Looking for ideas for salad toppings so my salads never get old and boring. What are yours?
