I am limited in salt use so have not really used it for the last 10-15 years. I get a product called SALT-FREE SPIKE from a whole health foods store. It is a good blend and has absolutely no salt but tastes like it does. I would like to start some fresh herb plants. I would like parsley, basil, rosemary, thyme, oregano and chives. I have chives growing in my back yard next to my barn which I can use in the summer.....that is, if I can keep my hubby and his weed-whacker away from it. I have a hard time convincing him that it is NOT a weed. LOL I also like cinnamon, nutmeg, and ginger. I am not a big fan of lemon-pepper anything and the 2 that I absolutely cannot use are fennel and caroway. They make me sicker than a dog. No Italian sausage or rye bread for me, thank you! I wonder if I could eat rye bread if I left out the caroway seed? hmmmm....... I will have to try that.

Here is the ones that I use the most: Oregano and Basil, fresh only. Cumin, white pepper, whole black pepper, turmeric, coriander, rosemary, and finally chili powder.

I use lots of herbs and spices (and have a herb garden). But the ones I use the most - mint (in salads), Italian parsley (in everything) and basil. Chilli is probably the spice I use the most, and at the moment love cardamom in sweet and savoury things - and ground into my coffee
I poach chicken using salt, pepper, and cumin as a rub and then fennel in the water. The result is amazingly flavorful and if you add to a food processor, you can make a mean mock waldorf-chicken salad.
I love cinnamon and paprika and use them in ... well, almost everything!
But the past few years: nutmeg. Especially in egg dishes, but also in potato dishes. Freshly ground.
And most recently: thyme.

I avoid salt as much as possible. I found a product called SPIKE (it comes both regular and salt free) I found it in a whole health foods store. It is a great blend of herbs and spices and can be used on almost anything, although I don't think it would be very good on fruit. You would swear you had put salt on your food but there in not a drop in the salt-free kind. It makes Mrs. Dash taste like something you would imagine came out of an ashtray. Sometimes a food just needs a little salt (like a hamburger) and this really fills the bill without any salt.

My all time favorite spice is cinnamon -- I put it in oatmeal and in cold cereal, and in my yogurt.
My favorite herb is thyme -- I cut up cauliflower and spray with oil, and then sprinkle with salt or seasoned salt, pepper, and thyme, and roast in the oven until it gets brown around the edges.
I also love a Moroccan-style blend of cinnamon, cumin, turmeric, and coriander.
I enjoy a lot of different spices. Sea salt & fresh ground black pepper. I really like rosemary, basil & nutmeg. Cumin, turmeric, cloves, cinnamon, ginger, garlic, oregano, thyme, and cayenne pepper are all very pleasing as well.

Fresh anything (except too much cilantro). For spices I particularly love cinnamon, both taste and aroma. There is a Penzey's spices in Tucson (about 80 miles away) and it is my very favorite place to go and splurge.
I LOVE most spices and herbs, though there really isn't a single one I manage to sneak into most meals.
Mostly, my spice cupboad is split up into what meat I'm going to use.
For example, mustard and allspice are a must on pork, beef will always have cardamum, sage, and parsley, chicken will always have curry and thyme, and plain veggies will always make use of rosemary; I have oregeno and red pepper flakes for things like pizza, I have mace, cloves, and cinnamon for things like baking, ect.

It changes all the time but, it's been fresh herbs for me this week. Cilantro, Basil, Rosemary...
My husband will tell you that I have a serious spice problem! The cupboard to the right of the stove is crammed with herbs and spices - 3 shelves worth, and then there is a shelf on the other side of the stove that has all of my oils, vinegars, soy sauce and salts in it.
The bottom shelf of my spice cupboard has the bigger containers of things I buy in bulk and use all the time - oregano, sage, marjoram, rosemary, tarragon, chile flakes, cumin, garlic powder, paprika, chile powder, turmeric and yellow curry powder.
Some of my other favorites are garam masala and berebere spice, as well as pinchitos and ras al hanout. These are all spice mixes, so they're easy to toss on a piece of meat or in a pot of beans to add some flavor without a lot of thought or work. I also always keep fresh limes, serrano chiles, ginger and garlic on hand.
I like Prestis for Pizza and also Mrs Dash for steak

I LOVE Cavendar's Greek Seasoning. It's a blend of salt, pepper, oregano and magic! I use it on my eggs, chicken breast, or part of my oil/vinegar dressing. Soooooooooooo yummy!

What is your favorite herb or spice to cook with?? I especially love to add oregano and crushed red pepper!! Tonight I had a Smart Ones Lasagna Florentine with lots of oregano, tastes so good!!!!! I love to use them to jazz up frozen meals =)
