I've collected, edited and digitized recipes since my first PC... if you'd like pages of recipes, pop me an e-mail. My formatting doesn't translate well into these Messages, but I think you can figure out the following:
Vege, Squash/Butternut Butternut Squash Puff 3 cups butternut squash, cooked & mashed ½ tsp grated lemon rind ¼ cup evaporated milk/cream ¼ tsp salt, 1/8 tsp pepper 2 Tbsp butter 2 Tbsp flour 1 Tbsp sugar 2 eggs, beaten 1 Tbsp grated orange rind Combine all ingredients and turn into a 1 quart buttered casserole. Place in a 9” square pan of hot water. Bake at 350F for 40-50 minutes or until firm in the center. Serve with turkey or pork. Great for a holiday side dish. 4 servings
Vege, Squash/Butternut Butternut Boats 3 small butternut squash, 1½ lb each 1½ tsp salt, ½ tsp pepper 4 large leeks, sliced whites 5 Tbsp butter/margarine ½ cup sour cream 1 tsp dried thyme 3 cups chicken broth Chives or parsley, chopped Cut squash in half; remove and discard seeds. Place with cut side down in a greased 9x13” baking pan. Add ¼” water. Cover and bake at 375F for 40 minutes or until tender. Scoop out pulp, leaving about a ¼” shell. Set shells and pulp aside. In a large saucepan, saute leeks and thyme in butter until tender. Add pulp, broth, s&p; simmer 20 minutes. Remove from heat; cool slightly. Puree in a blender; return to pan and heat through. Spoon into squash shells. Place sour cream in a heavy-duty resealable plastic bag; cut a small hole in the corner of the bag. Pipe a coil of sour cream over squash filling. Beginning at the center, use a toothpick to draw right angles across the piped lines about ½” apart. Sprinkle with chives. 6 servings
Vege, Squash/Butternut Butternut Squash Gratin with Rosemary Breadcrumbs ¼ cup unsalted butter 1 tsp sugar 2 cups shart white Cheddar 4 cups onion, thin sliced ½ tsp salt, ½ tsp pepper Cheese, grated 2½ lb butternut squash, ¾ cup chicken broth 1½ Tbsp rosemary, chop Peeled, ½” cubed 2 cups soft white breadcrumbs ½ tsp dried thyme Butter a 9x13” glass baking dish. Melt butter in heavy large skillet over medium-high. Add onions; sauté until onions are light golden, about 8 minutes. Add squash; sauté 4 minutes. Sprinkle sugar, s&p over vegetables; sauté until onions and squash begin to caramelize, about 5 minutes. Spread vegetable mixture in prepared dish. Pour chicken broth over. Cover tightly with foil and bake at 350F for 45 minutes. (Squash mixture can be made 1 day ahead. Cool, then cover and chill. Reheat in 350F oven, about 10 minutes. Increase oven temperature to 400F. Mix breadcrumbs, cheese, rosemary and thyme in medium bowl. Sprinkle over gratin. Bake uncovered until top is golden brown and crisp, about 30 minutes. 10 servings
Vege, Squash/Butternut Stuffed Butternut Squash 1 small butternut squash, halved lengthwise 3 lg button mushrms, fine dice ¼ cup uncooked rice ½ cup chicken broth 10 green beans, diced ¼ lb kielbasa, finely diced 1/8 cups Cheddar, shred Scoop seeds out of squash. Place butternut squash halves cut-side up in baking dish. Bake at 375F for 30 minutes. While squash bakes, combine rice and water with bullion cube, bring to boil and reduce heat, simmering covered for 10 minutes or until rice is tender. Mix sausage, mushrooms, green beans, and cheddar cheese with rice. Stuff squash halves with mixture and bake an additional 15 minutes or until squash is tender. 2 servings

I made this the other night, it was super good. Spicy Roasted Butternut Squash with Smoked Sweet Paprika http://www.kalynskitchen.com/2011/02/recip e-for-c.html The only change I'd make is less oil if your squash is on the smaller side. Also I used regular paprika and it was fine.
That site also has a ton of other recipes for butternut squash that look good too, you can just search for "butternut" in the search box on the right side.
The reason I am posting this is because we have loads of butternut squash, but I get tired of making nothing but soup out of it. Preferably something without meat, but nothing that will take me 5 hours to accomplish
