I too love the squash and pumpkin season. I like butternut mashed like potatoes and add a little butter, salt and pepper. Yummy! I have never roasted it though and will have to try some that way as well.

My fall foodie diet fail has always been Starbucks' Pumpkin Spice lattes. They have been my undoing every single year for as long as I can remember! This year I FINALLY found a way to fix it. I found pumpkin spice k-cups for my keurig. I use a sweet n low (I know, terrible for you but I love it) and a splash of almond milk and it's every bit as good as a fattening latte. Plus so much cheaper!!
Thanks for some great ideas, everyone! Now I'm going to have to go buy some nice acorn or butternut squash. I also love all the beautiful shapes and colors of squash; I want to arrange them in a basket and look at them for a few days before I eat them. :)
I just hit up a local farm and bought a ton (possibly literally) of squash for cheap! It stores really well. I cooked up a butternut squash from last fall this July and it was still good. Just remember to store it in a cool dark place. The farm was selling them for $3 a squash and they were monstrous, the first one I baked up yielded me 8 cups of flesh!
I have made buttercup squash waffles, soup, crustless pie and muffins so far. I'm going to make Parmesan pumpkin bake in the next day or two as well.

One of the best things I ever ate was roasted acorn squash with butter and brown sugar! That first bite ever was heavenly.

Last year I had delicata squash for the first time and thought that it was delicious. And I don't really like squash.

I bake acorn squash and then put a nice little combo inside (a/k/a stuffed acorn squash):
Olive oil (small amount, just to mix the ingredients) Wild Rice Cranberries Grated carrots Sliced almonds Green onions
You can make any variation you want on the ingredients, and could even stuff with quinoa or brown rice and switch out your other ingredients - love to get creative with this!!

Calabaza is my favorite squash. If you eat potatoes an easy way to add winter squash is to use them instead of potatoes. I usually cube my squash and use it in curries, soups and stews or roasted up with a chicken sprinkled with herbs -- very yummy.
