I throw in some Jimmy Deans turkey sausage crumbles which helps me get in my protein! What a perfect dish to make to have for the masses at my home this Thanksgiving weekend!

I make a recipe very similar to this and bake it in a muffin tin so it's already portion controlled. Freeze them and just microwave a couple mins and it's breakfast in the car! emoticon

I make a similar Egg Beater Casserole in a 9x13 pan and cut it into 8 pieces which I freeze for later use. I usually make 2 pans at a time. Recipe below is for one pan. Vary the vegetables according to what you like. I also spread shredded cheese on the top when I take it out of the oven. That is enough to melt the cheese.

1 container Egg Beaters (7 eggs) 210 cal.
1/2 c nonfat milk 45 cal.
1 large onion chopped
1 t salt
1/2 t pepper
1/2 T italian seasoning
vary the vegetables -- chose any or all you like and as much as you like (these are ones I like):
3 c shredded zucchini
1/2 large red pepper chopped
1/2 pound bean sprouts
1 can (8oz) mushroom pieces (drained)

I mix everything together in one bowl and pour into a 9x13 greased pan. I bake this at 350. Depending on how many vegetables are used it can take about an hour in my oven--Just till it starts to brown and seems solid.

I'd sautee the peppers and mushrooms a bit first. Use as much or as little of the veggies to your own personal taste. I have no clue on milk, I don't usually use it to avoid extra carbs for my husband, but I would think skim milk would work fine. For a 13X9 pan, I'd probably use two cups of Egg beaters (that's 8 eggs, right?), maybe 1/2 cup of milk. Whisk in a bowl with the milk and veggies, then pour into greased pan and bake at 350 until set. Probably about 20 minutes, give or take. I also like to add cheese to mine about halfway through cooking to get melty on top.

I am looking for a recipe, similar to that farmer casserole, that uses Egg Beaters instead of eggs. The ingredients I'm working with are Egg beaters, mushrooms, onions, some sort of fat free milk (evaporated?) and possibly green peppers.

I am not good at putting recipes together. I'd like to make enough so I can cook it in an 13x9 baking pan.

Can someone who is good at creating recipes put this together with the proportions I need and the correct type of milk?
