the human metabolism isn't one thing. I , personally, cannot eat a lot of carbs. I am having 27 g today. I try to split them up between my meals, so I always have some, but my sleep has gotten much better since going low carb. I used to wake up several times a night, now I get 6-7 hours straight at night. We are all individuals, and it is folly to think there will be one answer for all humans. Some people do well on carbs, some people don't
not eating carbs before bed DEFINITELY affects my sleep! I cannot fall asleep without some sort of carb in me... nor can I stay asleep. If I am tossing and turning at night, I always make a piece of toast and that usually puts me out quickly.
For the last couple of nights I was having to eat late in order to cram all my calories and other nutrients in for the day or else have a big deficit. That's as bad as over-eating, not to mention it would ruin my momentum.
To my surprise I found that eating at night helped me to stay asleep! I eat balanced meals - veg, a small portion of protein, and a whole grain with my evening meal. Dessert includes a fruit in some form, about an hour after my dinner.
I was using the philospophy "no food for 3 hours before bed". I wasn't sleeping well. I'd go to bed with a rumbling tummy - after all during my waking hours I eat at least a little something every 3 hours or so. Since the late night dinners seem to be doing the trick, I am going to make sure they come a little earlier and then have a southbeach muffin or other carb and keep track of how that works for me.

if i eat a carb overload before bed (rita's water ice)...i literally pass out. my family laughs. it's like i've had too much to drink. i try not to eat anything like that because i cannot handle it...if i do eat high sugar, it needs to be balanced with fat (like ice cream) i don't have the extreme sedation. i told my md...he's like "well then don't do that". nice medical answer.
Well, technically, nothing has been proven. No one knows for SURE what the deal is with the human metabolism. There are a lot of factors that come into play. I can guarantee that in some cases, the food you eat before bed will be stored as fat, and vice versa.
Also, keep it up for like two weeks to make SURE it is the carbs that are helping you sleep. (Its possible that you were getting hungry before, so you would wake up during sleep)
I used to hear that eating carbs after 4pm is a NO NO, but then I read the myths and truths here at Sparkpeople, and it says it doesn't matter, is just a myth, your body don't care so I'd say have your starch before bed time if that helps you sleep, just track everything to be sure you are within your calorie range I'd say.
I was really being strict with not eating four hours before bedtime and doing my carbs more in the morning and lunchtime. However, I was not sleeping. I have not been as diligent with my nutrition tracker lately but have noticed I am sleeping so much better having starchy carbs about an hour before I go to bed. It's almost been a relief to actually sleep most of the night.
