I'm following ETL and I feel so much better. My cravings for sweets, cheese, alcohol and junky carbs are gone. That is the most profound change I've experienced over the past month. I agree with the basic idea that eating high nutrient foods is good for the body. I'm not meat fanatic, so it's not a big deal for me to cut back on meat. I do miss being able to sauté veggies in olive oil.
A cup of chilled lentils served with a squeeze of lemon juice, chopped red onion, campari tomatoes, Maldon sea salt flakes, and pepper is an amazing lunch for me. It satisfies me for 6-7 hours. I was so excited to make this personal discovery! Sometimes, I expand this lunch by adding chopped romaine, arugula, sunflower seeds, and mixture of sautéed mushrooms, red peppers, and onions (sautéed in water per ETL, then chilled). I never knew I'd enjoy the taste of chilled sautéed veggies in my salad. YUM!
