I bought some avocadoeson sale, and found this post, how lucky! I followed the link posted below. What a bunch of recipes! I am ging to try the Avocado Pecan bread. I love home made breads and this one sounds yummy and healthy.
Avocado has 0 cholesterol. You can see the nutrition facts here: http://www.avocado.org/nutrition/ They are high in fat, but the majority is heart-healthy monounsaturated fat.

This is one that I really enjoy....
Chunky White Bean-Avocado Dip
3 ripe Hass avocados, pitted and peeled 1 can drained canned white beans (Navy or even Northern beans) 2 cloves garlic, minced 1/4 cup chopped fresh cilantro leaves 2 tsp. fresh lime juice Salt and ground black pepper
In a medium bowl, combine avocados, white beans and garlic. Mash with a fork until chunky. Fold in cilantro and lime juice. Season to taste with salt and black pepper.
This is AWESOME and so much better tasting than regular guacamole. If you want some heat, you can add chopped jalapeno.

i take avocado in a shake. few chopped pieces of avocado, a glass of chilled milk.. blend and slurp..but don't know how many calories one glass has..

I mash them and add diced tomatoes and sliced green onions. Add some course salt, lemon pepper and a sprinkle of cumin.
This simple guacamole can be added to sandwiches to replace mayo, on top of salad to replace dressing. Or, as my 3yo likes, as a side dish. :)
I love avocados! I sometimes bring one to work for lunch. Just add a little salt.

Here is a yummy dairy-free dessert using avocados.
4 avocados 1 cup cocoa powder 1/2 cup maple or agave syrup (or to taste) 1 tsp vanilla 1/4 tsp sea salt water, to thin to desired consistency
Place all ingredients into a food processor and blend until smooth. Chill before serving. Keep refrigerated and use within 5 days.

avocados are great in a bean and corn salad:
1 can of black beans, rinsed and drained 2 cups of corn (frozen or fresh off the (cooked) cob) 1 tomato chopped 1/4-1/2 red onion chopped 1 avocado, chopped juice from 1 lime hot sauce to taste 1 Tbsp ground cumin cilantro, if you like
Just mix everything but the avocado together, then add the avocado and stir one more time. It's ready to eat. (Adding the avocado last keeps it from getting completely smooshed so you still have nice chunks.

i like them anywhere, but especially on sandwiches.
also i use some instead of oil to make salad dressings. it's usually kind of a funky color, but add a creaminess and avocado deliciousness!

Just what I am looking for. Ideas for Avocadoes. One of the Healthy Heart Foods. After 11 years I just had my second minor heart attach. I'm tired of the statin side effect so I've really have got to work hearder on what I fuel my body with (smile). A sandwich for lunch, a snack, an evening munchy.
Thanks for the info and recipes. It's a misconception people have I guess, any food with high fat content has got to have high cholesterol. But since I learned that it's actually one of the most nutritious foods, I still keep buying them.
I don't think I've ever had salads with avocado in them. Will definitely give these recipes a try. Thanks again.

Avocados do not have much cholesterol to speak of. They are high in fats, but the fats they have are very healthy. A medium avocado has about 25 grams of fat, so if you have about 1/4 of one it's only 6 grams of fat.
I like to put slices of avocado and lemon on a sandwich instead of mayo. It's also very yummy if you cube it and put it in salads.

We make a salad from black eyed peas, green onion, tomato, a bit of olive oil and seasoned rice vinegar and put inside halved avocados.
Not sure where you read or heard that info but avocado's DO NOT have any cholesterol. Zero.
You can add avocado to an omelet, a salad or make some salsa ! It can be mashed and used a sandwich condiment instead of mayo. Turkey and avocado sandwich yummmmmmm ! Or make a chicken and avocado quesadilla.
The only recipe I have is for guacamole !

In a medium bowl, mash together the avocados, lime juice, sour cream and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve with tortilla chips or cut up veggies to dip in !
I love avocado. I heard that although it has a high cholesterol content, it's very nutritious. I normally just mix it with nonfat milk and a little honey or sugar. I'd like to learn simple avocado recipes. Please post your fave ones here. Thanks!
