I don't use recipes per se, but I will share what I do:
chop up pumpkin (seeded but with the skin on still), chop up some potato (skin still on) - a little less in weight than the pumpkin. Chop up an onion. Add a couple handfuls of red lentils (helps with protein and fibre) Boil in a little salted water OR instead of salt, add some chicken stock. Use a wizz stick (blender) to puree, adding in a clove of raw garlic and a sprinkle of ground nutmeg.
OR you could add in a little curry powder if preferred.
Sometimes, just as I am about to puree it, I add in a handful of parsley as well. If I want it thicker, I often add in a little OAT bran, but some people thicken with flour.
