cook up some meat.. and then slice it thin, and have sandwiches... I love sliced turkey with spicy mustard.. much healthier than sandwich meat.. and I use smartwhite bread from Wonder.. lower calories and sodium
I like quick meals to bring with me to work. I normally don't eat enough fruits and vegetables, so my normal day sounds like what you are used to bringing. Breakfast - oatmeal with blueberries, or yogurt, or string cheese with banana Lunch - normally two pieces of fruit with a serving of nuts. Snack - pretzels, nuts or a piece of fruit.
I try eating some kind of protein for lunch and my snack, which is normally nuts to maintain my hunger throughout the day.

I make a huge batch of scrambled eggs with salsa on Sunday and then portion it out into 6 containers. Then I portion out 2% cheddar cheese into each container. When I get up in the morning I throw the contents of a container into a low fat, low carb tortilla, wrap it in foil and put it into the toaster oven while I get ready for work. When I'm ready to go, so is it. The foil makes a great holding pouch for the drive to work.
For lunch I do something similar. I will cook a couple of pounds of chicken in the crockpot on the weekend so that I have cooked chicken in the fridge for the week. I use it for anything that would need pre-cooked chicken...chicken salad, chicken wraps, etc. I also buy a smoked turkey breast and slice it for the same things.
Breakfast Hard boiled eggs Whole Wheat english muffin with peanut butter Omelet made with veggies stuffed into a whole wheat pita pocket
Lunch Make a whole chicken on a Sunday ( a big Perdue oven stuffer roaster ) and eat it all week. Chicken salad Chicken with salsa Chicken rollups Chicken and veggies

Hi All! I jumped back on to SP last week after a few months off. I gained back 15 lbs of my previous 40 lb loss over the holidays, and I'm ready to take it off, plus some! I'm down 4.5 lbs since I started back, which is definitely motivation to continue.
I eat two meals plus a snack at work 5 days a week, and I need some more ideas for easy to pack breakfasts/lunches/snacks. I'm looking to branch out from my usual oatmeal or yogurt + fruit and salads + protein. I have access to a fridge and microwave at work.
