Our fav is homemade whole wheat pizza crust, with all natural tomato sauce, banana peppers, mushrooms, black olives, onion, tons of baby spinach and fresh cracked pepper and salt with fresh mozzarella on top. LOVE

As for OBIESMOM and the canned asparagus - you can get to love that stuff. There are even recipes (I don't have them, but I think they're on Spark) for making a canned-asparagus guacamole-type dip!

I've done this with a pita crust, but I also stock up on Kashi frozen pizzas when they are on special. It's one of my favorite "clean out the fridge" meals. I add yellow squash, zucchini, asparagus, peppers, onions, artichoke hearts, spinach, mushrooms, etc. If we want meat, I use Canadian bacon or deli sliced sandwich meat. Hot banana peppers are also really good on pizza.
DH bought some canned asparagus (I don't know WHAT he was thinking!) Rather than throw it out, I put it on the last veggie pizza I made. I really doubt I could eat canned asparagus any other way. I thought about donating it to the food pantry, but I hate to subject anybody else to that. If they've never had fresh asparagus, they'd get the a totally wrong idea of a really good vegetable.
Thought I would share my new favorite way to eat veggies... on pizza!! What a fun way to have pizza and get another serving of veggies in at the same time. I use a whole wheat pita as the crust (110 calories) add a little bottled pizza sauce (20 calories) add some veggies (30 calories) and top it all off with a little shredded low fat mozzarella (80 calories). Sometimes I add black beans (30 calories) or chopped chicken / sandwich ham (50-75 calories) for a little variety. For the veggies, I add chopped onion, and microwave to thaw a 1/2 cup or so of the frozen mixed veggies before adding to the pizza. (usually carrots, cauliflower and brocolli). Place in the oven (350 degrees) on a cookie sheet until everything is warm and bubbly. Yum Yum ~ Enjoy!
