Maybe instead of a side...an Appetizer

Get BabyPhillo Shells...... fill with cocktail sauce and top with a shrimp...easy and good low calorie!

They look pretty too! .....and you can add a sprig of parsley for decoration. Makes 15.

I found a Honey-Dijon Potato Salad recipe on the Taste of Home website. Goes great with ham/pork and burgers. I first found it in the "Taste of Home Comfort Food Diet Cookbook". The original Comfort Food Diet cookbook (green skillet on the cover), as well as "Comfort Food Diet Family Classics Collection" and "Comfort Food Diet Quick & Easy Favorites" are available at Barnes & Noble stores. You can also order them from Barnes & Noble's website as well as getting them as NOOK Books (e-books). The cookbooks also have other information in them such as lightening up family recipes, healthy eating (portion control, eating out, etc.) and exercise/fitness advice and tips. The books stress calorie count, portion control and fitness. They've been very helpful to me for planning, as they take you through the day with breakfast, lunch, snack, dinner and dessert (yea!) recipes. Yup, you can actually eat dessert. Woo hoo! Just balance the calories over the course of the day! Also (and free!) go to the Taste of Home website and hover your cursor over "healthy" and you can find additional recipes. This serves 8. Not sure how many people will be there. You can always double it if you have to. Serve it in a festive bowl !!!


FRUIT N YOGURT SALAD


1 cup chopped fresh strawberries
1 cup fresh blueberries
1Granny Smith apple cored and chopped
1 Fuji apple, cored and chopped
2 kiwi fruit, peeled and chopped
1 (15 ounce) can crushed pineapple
1 cup red grapes
2 cups fat free lemon yogurt


In a large bowl, mix together the strawberries, blueberries, Granny Smith and Fuji apples, kiwi fruit, crushed pineapple, red grapes, and lemon yogurt until thoroughly combined.

Refrigerate before serving.
