Yeah, I am most definitely winded but I feel like since I make a concerted effort that I should note it. I do get my heart rate up and I'm breathing heavily.

If it's purposeful exercise that gets your heart going, then yes! 5 minute does count. :) If it didn't the tabata protocol wouldn't be so popular!

I would write it down so u don't forget and track it later when u have time to tack all your activities.

I have started to take little breaks throughout the day at my office to just run up and down the stairs for 5 minutes. Can I track each of those five minutes or should I wait until I hit a certain amount of time?
