Ham balls are made like meat balls -
It is a PA Dutch thing... basically, ham is put through the meat grinder and then binding agents are added. Hamloaf is also a very popular dish too. This place doesn't offer it, but you can get the mixes at many of the local butcher shops.
All of the food here is homemade. Most of it is local too.
ohh... yeah - Rivel soup is NOT healthy in any way! I am pretty sure the dumplings are made with lard or bacon fat (if it is made traditionally, and I have a sneaking suspicion that since most of the cooking is done by the Mennonites, that it is made that way)

What ARE those ham balls? Meatballs made w/ ham?
That chicken corn rivel soup looks interesting, although it's hard to tell what's in it... can't tell if those are dumplings or cauliflower. If it's cauliflower, I would get that with a half turkey club without the mayo.
Otherwise, I agree with the cranberry apple salad, that sounds delicious. Or the grilled chicken breast entree with sides of broccoli and baked sweet potato without the butter.
Edit: OK I looked up what chicken corn rivel soup is, so don't have that, it's little dumpling type things in it.
