This may be old news to some, but today I discovered that silken tofu is a beautiful substitute for oil in salad dressings, rendering them virtually fat free while tasting like oily dressings! I made caesar salad dressing today, subbing the silken tofu for olive oil (and blending it with garlic, lemon juice, Worcestershire-or light soy if you want- parm cheese, salt and pepper) and I can't even taste any difference! sooo yummy... thought I would share if anyone else loves creamy dressings :)
