If you have access to the current (summer 2013) issue of Taste of Home magazine (Canadian edition), I highly recommend the "Ratatouille with Feta Gratin" on page 43. I made it for the family tonight and we all enjoyed it. It is packed with veggies. I also added some "veggie ground round" for added protein. It could easily be made without the cheese/bread topping, for those who'd want to cut calories/dairy/gluten. Super-easy and tasty. This is my favorite cooking magazine.
