I skip the ham because it is usually high in salt, but freezing turkey slices, chicken slices and even roast beef slices is all great. 3 slices of Deli roast beef is about 150 calories, so I divide things up before freezing so they are easy to gab and I know what the calorie content is.
Another idea would be to bake a whole chicken on the weekend and remove from the bone and freeze the cooked chicken to use in casseroles during the week...
You can also freeze cookies, butter, mozerella cheese, cream cheese, chocolates, lox, bread...Brownies & Cookies, nuts, flour, milk... Just put them in resealable bags or storage containers with tight fitting lids
I agree with the previous poster - the texture DOES change on cured meats. The taste can change slightly on chicken etc. but unless you are really 'in' to food, as in have a good pallet, a lot of people can't tell the difference much.
Plain roast chicken or turkey would be fine. Ham and anything else that's processed depends on how picky you are. If meat has been salted or cured, the texture changes when you freeze it. I personally don't mind/barely notice, but some people find it a little mushy. My recommendation would be to buy just one very small extra serving when it's super-cheap and try it. If you don't like it, don't do it again.
And it's just a question of taste. It won't hurt you in any way.
I like to buy things in bulk when I can. There is usually a really good price on a certain deli meat each week - does anyone know if I can buy a few week's worth of sliced ham or turkey and freeze it? I've never tried it and think it would be fine, but I want to ask first..
