I agree with Cole, if you look at this as a lifestyle change, then it is just getting there...
For me, I've been doing this regularly now for over 3 months. I still have days where I don't feel like it. By looking at this as a true lifestyle change, it helps me to see, that one day off is okay, as long as I don't give up.
First, find a workout that you like, that challenges you, and stick with it. You can change it up from time to time, sure, but you have to give it a fair shake!
The other things you should think about is that when you are sore, it just means you are moving muscles you haven't in a long time... you will miss it in a while when it stops. If you quit though, you just have to go through it all again!!!

Perhaps rather, look at it as a 'healthy lifestyle' rather than some temporary program?
Keep working toward your goals - sometimes even after 300 days you will have ONE or two days when you struggle but you will find that lots of the days in between are not a struggle at all. Sometimes even on day 3000 you might struggle again - but the longer the healthy eating and exercise have to become habits, the less often and the less severe the struggles are. You can do this.

It does get easier and become more natural and after a while your tastes change too. You start really feeling better when you do your exercise. You start to find some old favorites in the food line are just too sweet or just don't taste as good as being healthy feels. Don't quit - just keep moving forward and when you slip up still don't quit - just keep pushing through it.

Every step you take in the direction of your goals gets easier and easier and the healthy thinking that goes with those choices grows and becomes your new style.
Making the resolve and commitment in your mind takes very little time but has long lasting impact. Ask yourself what you really want and make that resolve. Strengthen that commitment with back up actions that include written goals, scheduled workout times, stocking healthy choices and appreciations for every health step you take.

I've had a thousand successful "Day 1's" but Day 3 is really what gets me. It's the day when the voices creep into my head and start talking about how my muscles are a little sore so maybe I should rest them, or that I don't want to get bored with the workout routine so maybe I should just go for a short walk instead, or that everybody deserves a cheat day now and then so let's just order a pizza!
I know that I am essentially trying to break a bad habit (well 2, actually--bad food choices and lack of exercise) and that it takes time to form new habits, but if someone could tell me that it does get easier, that it gets more habitual to reach for healthier food choices, and that eventually I'll be able to do a 20 minute exercise routine without feeling like I am dying, that would really help me today!
