I've done this a lot. Has anyone used stevia in it--how does it come out? Yum, doing this tonight!!

Here is the recipe that we use:
1 (15 oz) can of pumpkin 1 can evap skim milk ( 12 0z) I used one cup of skim 3/4 cup egg substitute or 3 egg whites 1/2 t salt 3 tsp pumpkin pie spice ( I used 1/4 t of cloves, 1 t of cinnamon and 1/2 t ginger) 1 t vanilla 2/3 cup of Splenda ( I do not use Splenda so I used 1/2 sugar)
Combine all ing and beat till smooth. Pour into a sprayed 9 inch pie dish. Bake 45 min at 325 or until a knife inserted is clean.
I just use the recipe that's on the back of the Libbys pumpkin can. Use skim evaporated milk and cut back on the sugar. My oldest daughter's favorite dessert (she hates pie crust of any type), she has always wanted a crustless pumpkin pie instead of a cake on her birthday.
