This sounds amazing! Pumpkin pie has always been my favorite T-giving food.

I've done this a lot. Has anyone used stevia in it--how does it come out? Yum, doing this tonight!! emoticon

Here is the recipe that we use:

1 (15 oz) can of pumpkin
1 can evap skim milk ( 12 0z) I used one cup of skim
3/4 cup egg substitute or 3 egg whites
1/2 t salt
3 tsp pumpkin pie spice ( I used 1/4 t of cloves, 1 t of cinnamon and 1/2 t ginger)
1 t vanilla
2/3 cup of Splenda ( I do not use Splenda so I used 1/2 sugar)

Combine all ing and beat till smooth. Pour into a sprayed 9 inch pie dish. Bake 45 min at 325 or until a knife inserted is clean.

I just use the recipe that's on the back of the Libbys pumpkin can. Use skim evaporated milk and cut back on the sugar. My oldest daughter's favorite dessert (she hates pie crust of any type), she has always wanted a crustless pumpkin pie instead of a cake on her birthday.

No idea. I just use my standard pumpkin pie recipe, and of course I use evaporated SKIM milk in lieu of cream or whole milk! It works well.

I have meant to try this for a long time! Unfortunately, I just made the last of our frozen pumpkin!

This is the most delicious pumpkin pie. You wouldn't even know it does not have a crust. And it was super easy to make. A definite keeper!
