I like to make Chicken Fajitas. Put 3 frozen chicken breasts in the Crock Pot. Sprinkle half a packet of taco seasoning on top. Add a can of Rotel. Cut up two bell peppers (any color). Put it on low for 8 to 10 hours. When done cooking you may think it looks a little burnt but it isn't, it is the way the taco seasoning looks. Take two forks and shred the meat and it is ready to eat with some tortillas.

Enjoy!!

Like the chicken salsa recipe, I love the simplicity of chicken breasts and (fill in the blank). Sometimes just some liquid and spice, jar of salsa verde, add a can of beans, etc. I often just make something up, as long as there is enough liquid there shouldnt be a problem!

I use a crock pot for almost all of my grains and beans. They never burn anymore.

And Crockpots aren't just for dinner either. There's a great 'Slow Cooker Apple Brown Cinnamon Oatmeal' recipe at Sparkrecipes.com. I just put a half-batch in my 2 Qt Crockpot before I go to bed, and in the morning it smells amazing!

I have a cookbook "Not Your Mother's Slow Cooker Cookbook for Two" that we rarely use. It's great, don't get me wrong, just not our style.

It's yours if you want it. All it is for me is clutter.

We use our crockpot at least once a week for our family (of 5). I would suggest cooking "normal" in the crockpot and then freezing the extras. That way you have good healthy food ready to eat later!

I like to get as much ready the night before like chop up the veggies, cut up the meat if needed, measure out the seasonings. It takes less time to get it going in the morning and I don't have to get up any earlier for work! So nice to have dinner ready when you walk in the door. I will check out the crockpot.com. Sounds like a good site.

Spark has a chicken stew that I love. I take it to the school bring a meal, and all love it. I don't tell them it is healthy! You would have to half it.

I love pork chops cooked with chicken & rice soup. Very tender.

I made a lovely chicken dish in the crock pot yesterday, used 3 chicken breasts, onion, garlic, celery, broccolli, carrots,potatoe a stock cube, italian dry herbs with a dry packet of stroganoff sauce mixed with water and some fresh hot chilli, ( I put the broccolli in towards the end)

It was gorgeous, I served it with Funghi ( Polenta)but would also be nice with rice or potatoes

I love skinless chicken thighs in the crock pot with oregano paprika and black pepper on the chicken and a little bit of bbq and water to cover them cook on low for six to eight hours they fall off the bone

chicken breast with salsa (SPARK RECIPE) so good you can shred it and put it over brown rice or roll it up with lots of veggies for a mexican type of theme

You might check Crockpot.com. I was there the other day becuse I need a new one and noticed that in the recipe section you can search for recipes that fit the size of your slow cooker.
