I second the plug for Family Fresh cooking - she always has ideas of other things you can swap out instead.
Last - have you tried Whey Low? I read about it on here. I'm trying to cut sugar to cut the calories, but avoiding artificial sweeteners is hard. I love Brown Sugar Splenda (you can even bake bread with it!!) and I like the taste of stevia and use Truvia. But I decided to buy the Whey Low sampler pack. I have tried the maple one - it's good. About 1/2 the calories of sugar and lower glycemic index - I bet you can use the granulated version for a baking mix.
