Honestly, we love using portabello mushrooms as individual mini-pizzas. An added plus is that everybody can put his/her toppings on.

Edited, because I just read the entire post. Is there a particular reason why you have to make this specific dish? I still stand by the mushrooms, just cut each pizza into quarters.

What about using Joseph's pitas? They would be smaller but you could just make a few different veggie pizza varieties. You can get them at Walmart and it is only 4 carbs per pita.

I've made this and it tastes wonderful! I also used fruit in place of veggies at times. Don't know of a way to make can cresent rolls low carb.

I'm supposed to make a cold veggy pizza for a potluck this weekend. It's the pizza that typically uses crescent rolls as a crust and then it's loaded with a cream cheese sauce and vegetables. I'm looking for a low carb substitution for the crescent rolls or at least a lower carb substitution. Any suggestions?
