You can use the liquid to thin pureed butternut squash. Makes a delicious soup. Just add a little salt and pepper and you've made the easiest soup in the world. Well, maybe except for bouillon cubes but who wants to eat that? emoticon

Oh, and a friend gave me a taste of THIS soup. Yum (spicy) but yum!!

Thai Coconut Soup
Itís all too often that we forgo Thai food because rice, noodles, and peanuts figure so prominently in the cuisine. This soup recipe is Primal while retaining the Thai essence.

6 cups chicken stock
2-4 hot chiles (Thai, jalepeno, habanero, depending on your bravery), finely chopped and seeded (or not, again depending on your bravery)
3 cloves garlic, chopped
2 tablespoons grated ginger
2 teaspoons grated lemon zest
1 teaspoon lime zest
1/4 cup lime juice
4 tablespoons Thai fish sauce
1/2 pound sliced mushrooms
1/2 cup coconut milk (made at home with fresh coconut)
1/4 cup fresh coconut flesh, shredded fine
2 cups baby spinach
2 tablespoons chopped cilantro
Chicken (in strips), shrimp, or your favorite protein source

In a medium saucepan, combine broth, chiles, garlic, ginger, zest, lime juice, and 3 tablespoons of fish sauce and season with salt. Bring to a simmer and add mushrooms. After three minutes of simmering, add the meat and coconut milk. Cook the meat through, then add the spinach, letting it simmer until the spinach wilts. Add the cilantro and the remaining fish sauce. Serve and enjoy.

Coconut water is one of those new "fads". It's not bad for you and you *can* drink it as water, or try cooking rice in it (yummm).

You can always shred your leftover coconut. Toast it in a hot skillet. This adds a lot of punch to many dishes and stores easily in the freezer or fridge once dried.

If you want to make recipes calling for sweetened coconut, use your unsweetened dried coconut soaked in milk. Press the liquid out and you'll have a good no-sugar replacement for sweetened coconut.

Hi all. Anyone have experience with fresh coconut? Cracked one open and made the Coconut Cilantro Pesto. Very yummy stuff, but mine turned out runny rather than thick like pesto. Maybe too much orange juice? Anyway I have left over coconut to use. And the clear liquid that was in the coconut...what would you suggest I use it for? I think I like the flavor of it...
