Healthy Side Dish.....

Kale Chips, the perfect fall snack!

Ingredients:
2 cups of Kale, chopped, and hard stems removed
2 tbsp Olive Oil
Seasoning of your choice:
I used a pinch of sea salt
garlic powder

Preheat the oven to 300 degrees
Lay the kale on a baking sheet,
make sure to spread the pieces a reasonable distance
from each other so they cook instead of steam...

Once the oven is up to temperature, place the Kale inside and bake for 25 minutes or until crisp.

These could also be used with your favorite salsa or
guacamole instead of chips if you used bigger pieces.

CHEESY RICE AND BROCCOLI CASSEROLE

2 heads broccoli
2 (10.75 ounce) cans cream of broccoli soup
2 cups uncooked brown rice
vegetable broth
1 onion chopped
1 tablespoon butter
2 8oz bags of your favorite shredded low fat cheese like cheddar or monteray jack


Cook rice as directed on box but instead of cooking it in water, cook the rice in vegetable broth. The taste is so much better.

Saute onions in butter until done.

Steam the broccoli then chop it up

Mix together broccoli, soup, rice, onion, and cheese. Season with salt and pepper to taste.

Pour into a 9 by 13 inch oven proof dish that you sprayed with Pam.

Bake for 30 minutes at 350 degrees

I do a one-pot pasta recipe that is a hit every time. My recipe feeds three, so you can adjust to your crowd. Hope this helps. Also a time and money saver!

one pound lean ground beef or turkey
one jar Ragu robusto parmesan romano spaghetti sauce (or any flavor. this is what i use-has a full serving of veggies ineach portion)
one 12 ounce package pasta noodles, any kind (I use Wacky mac brand rainbow rotini-noodles are made with veggies)
Shredded low fat cheese

Cook hamburger or turkey until brown. Make noodles according to package directions.
Drain and rinse meat, drain noodles and combine. Pour sauce over all this and mix well. Top with shredded low fat cheese if deisred.

It's fast, cheap and easy, and you can adjust the recipe easily. My nine year old daughter loves this and has no idea she's getting her veggies. ;)

My mom always has everyone over for dinner on Christmas Eve. Everyone brings something different. We always have Turkey, Ham, and Shrimp that my parents make and then we provide the side dishes. I am looking for a recipe for an easily heated (or preferably slow cooker) potato, pasta, or rice dish. Others are bringing the veggies and such, but I want to impress the family with a yummy, healthy side dish!
