I too like to use the pre-chopped veggies when I'm time-pressed or just sick of chopping. They cost more, but I have decided I'm worth it!

I buy chopped zucchini and carrots and prewashed lettuce and mushrooms because I eat them daily.
I just chop strawberries and bananas daily because I eat them as my dessert. Chopping them slows me down and prevents me from binging or quickly grabbing cookies. When I am chopping, I remind myself to slow down and eat mindfully.

I am over 60 years of age and I am SICK OF CHOPPING! Well guess what, ladies. Pre-chopped veggies can now be found at your local (large) grocery store. I shop at Publix and they carry fresh pre-chopped lettuce (great for tacos and other dishes), onions (white and red), celery, peppers and even a trinity mix for those yummy creole dishes. They also carry fresh pre-chopped broccoli. It's a dream come true! Yes, you pay a little more but to me, it's worth it!

I get sick of chopping! I chop up onions and peppers all at one time because I eat those all the time with nearly everything. But other than that, I just chop as I go. Fortunately, I am only cooking for one, so it's not so much chopping.

I chop once or twice a week and am done with it. I make salad-in-a-jar, which is a huge convenience.

I tell you, I sure was surprised at just how much time it does take to chop!
Though I don't mind it. Like FIERYGRACE, I have come to see it as something positive, enjoyable. Sort of meditative, for me. What else was I going to do with that 5-or-10-minutes-of-my-time that could have been ever so important? Might as well spend the time chopping and prepping something nice to eat!

Oddly enough, lately my chopping time I consider my "me" time. I love those early mornings when everyone is still asleep, or those late evenings after dinner is all cleaned up and I can just be in my cleaned up kitchen with my veggies and cutting board.
I never thought I'd hear myself say that LOL! But it's an awesome feeling now to know how much good I'm going my body with every veggie chopped! :)

Chop away :) I know my cutting boards are seeing way more use than ever before. So are my ziplock containers for taking lunches to work. And my dishwasher because I'm making food that requires preparation AND a plate.
Which are yummy, but all the chopping, deveining, scraping out all seeds, taking the green garbage and throwing it in the compost pile instead of the trash . . . Then the after-affects of the hot pepper juice on the fingers, even if washed off, can sometimes tingle even a day later.
Still, the peppers last me for a number of lunches, and if we make bigger batches of stuff, we have convenient GOOD food for the rest of the week.

Well, I've got to face the music. I started up again today after about a 2 year hiatus.
I realize that if this thing is really going to work, I'm going to have to chop a lot of fruits and vegetables. I'm not complaining, just stating a fact.
Convenience foods are going to have to be "chopped" considerably as well.
