Here is my BBQ chicken salad. Less fat with less mayo !!
BBQ CHICKEN SALAD
1/4 cup reduced-fat mayonnaise - NOT fat free 1/4 cup barbecue sauce - the key here is good quality BBQ sauce 1 tablespoon lemon juice 1/2 teaspoon pepper 1/4 teaspoon salt 2 1/2 cups chopped cooked chicken breast 2 medium tomatoes, chopped 1 celery rib, sliced
In a bowl, combine the mayonnaise, barbecue sauce, lemon juice, pepper and salt. Cover and refrigerate for at least 1 hour. That way the flavors meld.
Then add the rest of the ingredients and mix well.
Serve it over a bed of lettuce, as a sandwich or wrap !!
This weekend I bought a chicken salad at the Amish market called "Rachel's Chicken Salad" (not sure who Rachel is, but anyway...). The man told me that it didn't have sugar in it, and that it had all natural herbs and spices in it.I don't think there is celery in it. It is DELICIOUS. You could put it on shoe leather and eat it. But I'm sure it's also made with full-fat mayo. Does anyone have a good chicken salad recipe that's not sweet? No grapes or walnuts or anything please.
