LOW FAT/LOW CAL CHICKEN POT PIE
2 cups chopped cooked chicken - from a rotisserie chicken is easiest
2 cups cooked mixed vegetables - your choice potatoes, corn, string beans, peas etc
1 10.75-ounce can 98% fat-free, condensed cream of chicken soup
1 cup reduced fat Bisquick baking mix
1/2 cup skim milk
herbs/spices - whatever you like. parsley works well, garlic salt, buy a flavored rotisserie chicken to make the flavor even better.
Preheat oven to 400 degrees.
Combine chicken, vegetables and undiluted soup in an 8 x 8-inch baking dish. Whisk baking mix, milk and egg together until blended. Pour over chicken and vegetables. Bake for 30 minutes, or until the top is golden.
