Soup: Homemade tomato soup with fresh basil. Canned tomatoes, fresh & dried basil, garlic powder, and a few T of sherry make a wonderful fresh, cheap, healthy, flavorful soup when cooked down.
Salad: A mixed green salad with simply sliced pears, a few chopped olives, and some diced fresh basil. Serve with lemon and parmesan. Classic, fresh, a good mixture of salty, sweet, tart...so you don't miss the dressing.
Meat: Chicken Valdestano -- Pound chicken breasts lightly to uniform thickness. Sear chicken breasts and sprinkle with garlic salt, dried oregano, fresh cracked pepper. Bring pan to medium and add no sodium chicken stock. When chicken is just pink in center, top with thin slice of proscuitto. Add 1 Can no salt added tomatoes and top proscuitto with a thin slice of no fat mozarella.
Broil under high until cheese is melted and proscuitto is crisped on the edges. Garnish with fresh basil and serve over whole wheat pasta.
Veggie: Chop a little of the proscuitto finely and pan fry in 1/2 t butter until JUST crisp. Toss fresh green beans or asparagus and roll in pan to coat in flavor. Add small amount of chicken stock and tightly cover. Roll in pan often to cook evenly. Add dried, diced garlic that has been crushed and a small pinch of chicken bouillon. Serve while fork tender but not wilted (look for bright green color).
Dessert: Fresh berries with a little zabaglione (also known as zabayon or sabayon) sauce made with sweet wine, egg yolks and sugar. Reduce the recipe you use so that you only make a partial recipe.
