I think that there is a dietician on site here, you might try the recipes section they would be able to sub for you.

A popular cake, made with orange juice, orange candy, and coconut.
Cook Time: 3 hours
Total Time: 3 hours
Ingredients:

1 cup butter or margarine
2 cups sugar
4 eggs
1 teaspoon soda
1/2 cup buttermilk
3 1/2 cups all-purpose flour
1 pound chopped dates
1 pound chopped orange slice candies
2 cups chopped pecans
1 1/4 cups flaked coconut (1 can, 3 1/2 ounces)
1 cup fresh orange juice
2 cups confectioners' sugar

I would sub some of the butter with applesauce, and use low fat buttermilk, egg substitute and cut the sugar by using Stevia or at least cut to 1 cup and taste the batter for sweetness. and remember that the frosting will add some sweetness.
Oh, I found this and more recipes for this cake just typing in the name in Yahoo search and up popped a list of recipes.

Does anyone have a slimmed down version of a traditional Candy orange slice cake? I think the 4 cups of sugar and 2 sticks of butter, 4 eggs can be trimmed a little?
