yep, just did it this morning :) you can check out my blog if you want to see how yummy my breakfast sandwich came out!! i used a thomas light multigrain muffin, eggbeaters in the microwave, 1/2 a laughing cow light cheese wedge, and ham

yes but they are a little rubbery and have to be stirred every 10 seconds or so.

Is it possible to microwave egg beaters or other egg substitues? I need to get out I'd the drive through for breakfast, and I know I can make a low cal, high fiber English muffin sandwich, but I don't want to haul out a frying pan every morning.
