I'm going to shamelessly promote a recipe I just created here. It all started with the buffalo "wing" cauliflower recipe that's been floating around Pinterest since about the time of the Super Bowl. I adapted that recipe to fit my taste a bit and uploaded it here: recipes.sparkpeople.com/recipe-detail.asp?

Then today I got a craving for a buffalo chicken sub. I figured I could make the buffalo cauliflower and make a mock buffalo chicken sub at home, but much to my dismay I didn't have any suitable rolls for a sub, and not even a decent tortilla for a wrap. All was not lost, however, as I decided to turn to whole thing into a salad. Here's what went into it:

1/3 small head of lettuce
1 oz grated cheddar cheese
4-6 sliced black olives
1 serving of my buffalo cauliflower recipe

And on top of everything? Some ranch dressing I made up from yogurt, milk, and Hidden Valley ranch seasoning. Holy deliciousness. Here's the dressing:
