Grandma's Comfort Food
Pudding provides a terrific touch in this recipe, as does the applesauce. For moist and nutty brownies too good to be good-for-you, stir up a batch of these next time you're feeding the Cub Scouts or even (I know!) your daughter's Brownie troop.
Serves 8 (2 each)
1 cup all-purpose flour
1 (4-serving) package JELL-O sugar-free instant chocolate fudge pudding mix
1/4 cup Splenda Granular
1 teaspoon baking powder
1 cup Musselman's "No Sugar Added" Applesauce
1 egg or equivalent in egg substitute
1 teaspoon vanilla extract
1/4 cup (1 ounce) chopped walnuts
Preheat oven to 325 degrees. Spray an 8-by-8-inch baking dish with butter-flavored cooking spray. In a medium bowl, combine flour, dry pudding mix, Splenda, and baking powder. In a small bowl, combine applesauce, egg, and vanilla extract. Add applesauce mixture to flour mixture. Mix well until mixture is smooth. Stir in walnuts. Spread batter into prepared baking dish. Bake for 20 to 25 minutes. Place baking dish on a wire rack and allow to cool. Cut into 16 squares.

WHAT YOU NEED
2/3 cup flour
1/2 teaspoon baking powder
1 ounce (1 square) unsweetened chocolate
1/3 cup diet maple syrup
1 tablespoon oil
1/2 teaspoon vanilla extract
1/3 cup walnuts
vegetable oil spray
WHAT YOU DO
1. Preheat oven to 350 degrees.
2. Mix flour and baking powder in a medium bowl.
3. Melt chocolate in a double boiler or a microwave.
4. Beat egg in a small bowl.
5. Add syrup, oil, and vanilla to beaten egg.
6. Mix well.
7. Add melted chocolate to egg mixture.
8. Pour egg mixture into flour mixture.
9. Stir until smooth.
10. Stir in walnuts.
11. Bake for 40 minutes in an 8 x 8 inch baking pan
sprayed with vegetable oil.
12. Let cool.
13. Cut into 16 bars.
