I love steaming plain veggies and then I do throw a little salt in there to amp up the flavor (really just a pinch). Try experimenting too with different dips. I've found/made ones that are delicious and pack a great nutritional punch as well by using Greek yogurt/healthy swaps for unhealthy. Carrots/celery and natural pb though.... oh man. Heavenly!

I like adding all different kinds of veggies (mostly raw - chopped/sliced into smaller pieces) in a pita pocket. Dress with a little sauce for flavor. Adding meat and cheese makes it a round meal. Depending on how full you stuff the pita could make it a meal in itself.

No one has mentioned roasting yet and that's my absolute favorite way to eat cauliflower, broccoli, asparagus, Brussels sprouts and many others. Rinse and pat dry your veggies, sprinkle a little sea salt, add minced garlic if you'd like and roast in the oven. (Times vary - so look for recipes online. For instance... asparagus needs about 15 minutes, but cauliflower needs closer to 35-40 minutes.)

Try grilling them!! I love veggies off the grill..I usually do the green/red/orange peppers, squash, and zucchini..rub them down with a little bit of olive oil and you can lightly season, they are so good!!! I really like to eat them with chicken breast or fish..yummy

I add veggies like zucchini, peppers, mushrooms, and broccoli to pasta sauce so by the time I eat it, there's more veggies than pasta! Stirfrys are really good too.
You can season steamed vegetables with things like lemon juice, cumin, pepper, chinese five spice, rosemary, thyme, etc. Just avoid the salt or pre-mixed spice mixes since they are usually full of sodium as well.

Does anyone have any tasty ways to make veggies more interesting? I only eat them b/c "they're good for me", but have never particularly liked any vegetable! There's got to be ways to make them delicious so I begin actually loving them both when they're raw and when they're cooked. How do you other Spark folk do it? I'm sure when I check back here tomorrow, I'll find many great ideas! Thank you!
