I hadn't seen that recipe but I make a similar recipe in my slow cooker and shred it. It's an easy way to have a low fat/low cal snack or meal on a tortilla or salad.
I also boil and dice chix breasts and make chicken salad using Hellmanns Light Mayonnaise. It's a formulation that is different than other light mayonnaise- tastes very much like the full calorie stuff and only has 35 cal and 3.5 gm of fat per 2Tbl. I add a touch of dijon mustard, some fresh tarragon leaves and almond slivers so the salad itself for about 4oz chicken, 2TBL mayo and the add ins is under 175 calories. You can put it on a bed of lettuce or eat it on low calorie bread, rounds or wrap.
