1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon table salt
1/2 teaspoon baking soda
2 teaspoons ground cinnamon
1/4 cup unsweetened soymilk
1 teaspoon apple cider vinegar
1/2 cup packed dark brown sugar
1 1/2 cups mashed very ripe bananas
1/4 cup canola oil
1 teaspoon pure vanilla

Preheat oven to 350 degrees. Spray bottom of 8×4-inch loaf pan with cooking spray. In large bowl, mix flour, baking powder, salt, baking soda and cinnamon. Set aside.

Sir together soymilk and vinegar; let stand 2 minutes until thickened. In medium bowl mix soymilk mixture,brown sugar, banana, oil and vanilla until well blended. Add to flour mixture, stirring until just combined. Stir in nuts. Spread batter evenly in pan.

Bake 55 to 65 minutes or until browned and toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan and cool on wire rack.

Makes 1 loaf (16 slices)

Tip: You’ll need 3 large or 4 medium bananas for this recipe. Use very ripe bananas for the best flavor

The BEST banana bread recipe I have ever made.
This makes two loaves !!

LOW FAT/LOW CAL BANANA BREAD

Dry ingredients in a big bowl

2 cups flour
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
˝ cup brown sugar
˝ cup white sugar

Wet ingredients go on top of dry ingredients

˝ cup skim milk
2 eggs or Eggbeater equivilent
˝ cup applesauce
3 or 4 overripe mashed bananas
1 tsp vanilla


350 DEGREE OVEN

Place all wet ingredients on top of dry

Mix until well combined

Makes 2 loaves

Spray your loaf pans with PAM ( I use foil ones , no clean up )

Bake 60 minutes or until golden brown and cracked on top.

Hello!
I have not tried this recipe yet, but I found this recipe in one of my cook books.
Wholesome Banana Bread
2 Large Eggs
2/3 c Splenda granulated sweetner
1 1/3 c. mashed banana ( about 3 medium ripe bananas)
1/4c. veg oil
1 tblsp molasses
1 1/2 tsp vanilla extract
1 c whole wheat flour
1 c all purpose flour
1 1/2 tsp baking soda
1/2 c chopped walnuts (optional)

Preheat the oven to 350, lightly coat a nonstick 9x5 in loaf pan with cooking spray. In a large biowl, beat the eggs and sweetner together with an electric mixer until the eggs are pale yellow and have tripled in volume. Reduce the spped to low and add the mashed bananas, oil, molasses, and vanilla extract.
In a large bowl, combine the flours, baking soda, and nuts if desired. Stir. Make a well in the center and add the banana mixture. Using a large sppon or spatula, stir just until the dry ingredients are moistened.
Scrape batter into the prepared load pan and smooth top. Bake for 45-50 min or until toothpick inserted into the middle of the load comes out clean. Coll on wire rack for 10-15 min before removing from pan.

160 calories, 24g Carb (sugars 5g), Total fat 6g (Sat fat 0g) protien 4g, fiber 2g, cholestrol 35mg sodium 10 mg 3 weight watchers points .

I am looking for a Low Fat Banana Bread Recipe. I am having the HARDEST time finding one. Does anyone have one or any suggestions? I have tried epicurious and food network. I am unable to get to sparkrecipes at work. So if anyone can help me that would be much appreciated! THANKS in Advance! emoticon
