I love the idea of Meatless Mondays. I think that, next Monday, I'm going to make bean burritos (homemade refried beans, 100 calorie La Tortilla Factory Tortilla, 2% cheddar, avocado, onions) with a side salad!

Also being a veggivore, every Monday is meatless. Tonight was Moroccan inspired: couscous flavoured with apricots and ras-al-hanout (a North African spice blend) with a saute of onions, carrots, mushrooms, eggplant, spinach and chickpeas with ras-al-hanout and a tahini-harissa sauce (harissa is a spicy North African paste, I think Tunisia rather than Morocco). Oh, and some greens on the side.

I'm a vegetarian so every Monday is meatless! I had a salad with spinach, whole-wheat couscous, sliced pears, slivered almonds and homemade romesco sauce (a roasted pepper, toasted slivered almonds, shallots, red wine vinegar, Dijon, honey, etc.). I had a slice of toast with margarine on the side.
I actually did. Maybe I will do it every Monday from now on.

It all sounds good! Honestly, I don't normally do 'Meatless Monday' either but I didn't take any meat out of the freezer so I thought I'd go with what I had on hand. Of course I planned to make my quick version of Red Beans and Rice - and when I headed to the kitchen a little while ago realized I didn't have any canned red beans! So now it's going to be a White Bean, Black Beans & Rice...sometimes you just have to improvise. Should be ready in about 20 minutes :-)

Does Haddock qualify as meatless? It's fish. That's what we're having.
I can honestly say, I've never had a meatless day ever. I'm a meat eater. I think I have some sort of meat with every meal.

I'm leaning towards one of my faves that I used to eat a restaurant in Houston - a trio of smaller portions of stuff: 1) a cup of beans and rice with plenty of hot sauce 2) roasted brussel sprouts 3) roasted cauliflower
