Make applesauce. It's ridiculously easy and not full of all the "other" stuff you get in the commercial stuff.
Cut 'em in chunks, add whatever seasoning you like (cinnamon, pie spice, other fruit), throw 'em in a slow cooker (don't need fluid added) on medium and let 'em go until they're the consistency you like. Mash 'em with a tater masher. Enjoy!
Slice an apple. Sprinkle some cinnamon. Microwave a minute or until cooked. Add a dollop of frozen greek yogurt. Not a pie, but a neat snack. How about a baked apple with cinnamon.

I don't like to peel my apples because the peel has so much of the fiber and nutrient. I LOVE Becky's suggestion below, but would add either some oatmeal or granola before I topped with cinnamon and brown sugar. You can also add some raisins in if you want a bit more sweetness.

No, you don't add water. I add a little vanilla though. Apples have a lot of water in them. Cook them slowly and they will be like mush at the end. If it isn't the consistency that you just put it in the blender. Voila applesauce
FERNCREST, do you add water? My co-worker gave me a big bag of green apples and I'm going to make crockpot applesauce today too, but I can't remember if I'm supposed to add water or not.

I peel and core them and put them in my crockpot, slow cook all day to make applesauce. You can add cinnamon to part of the batch if you like.

I get heaps of apples when they are fresh and on special. I cut and core them (don't peel them), cut them up and stew them down in the microwave - then freeze them for later use.
Apart from that, I mostly eat them fresh, but if it is only one or two, I remove the core, cook them in the microwave then blitz them with a Wizz Stick, and add them to Muffins.

Becky's idea sounds great!
If I have the oven on anyway to bake a chicken or pork roast, I will sometimes add sliced carrots and apple wrapped in tin foil sprayed with a bit of olive oil or other cooking spray. I sometimes add a sprinkle of rosemary. Makes an easy side dish.
I would peel the apples and slice. Place in microwave safe dish. Add a little cinnamon and brown sugar or brown sugar Splenda. Cover and microwave until tender (2-4 minutes) for a GREAT baked apple dish.
