Have you tried vegetable juices like V-8 or the fruit veg mix "V8 Splash"? Or put some thru a blender and add your own fruits to taste? I started doing a "Smoothie" based diet, incorporating a cup of v8 splash, a couple of cups of mixed fruits, raw carrots, anything else I can throw in. I'm not big on eating either fruits or veges, but this way they all just taste rather like a cross between a milkshake and Hawaiian Punch. Also look for that cookbook by Jerry seinfeld's wife - she has recipes for puree'd veges added to everything from soup to muffins to lasagna. I don't have vita mix either, just a regular old hamilton beech 8 speed blender but it does the job. Once it is blended, you could run it thru a strainer or colander to reduce/remove some of the bulk.
HI, I would appreciate any ideas on how to incorporate more vegetables into my diet. I have the lap band, so volume is sometimes hard. Same goes for vegetables that are really stringy. Thanks for your help! Angela
