3 large tomatoes, sliced 8 ounces mozzarella cheese, sliced 1/4 cup olive oil 1/4 cup balsamic vinegar 1/4 teaspoon salt 1/8 teaspoon ground black pepper 1/4 cup minced fresh basil
Place tomato slices, alternating with mozzarella slices, on a large serving platter. Combine oil, balsamic vinegar, salt, and pepper in a glass jar with a tight-fitting lid; shake well. Drizzle over tomatoes and mozzarella; sprinkle with basil
Garlic Smashed Red Potatoes
3 pounds unpeeled red potatoes, quartered 1/2 pound butter, room temperature 3 heaping tablespoons of Romano or Parmesan cheese 3 cloves chopped garlic or more if you like 1-1/2 teaspoons salt 1-1/2 teaspoons dried parsley milk as needed
Saute the garlic in a bit of olive oil until cooked, set aside.
Boil potatoes until done. Drain water and stir in butter, cheese, garlic, salt and parsley.. Mash with a potato masher . These are meant to be smashed potatoes,not mashed so you should have lumps of potatoes instead of creamy mashed.
Add a splash of milk if desired. If you do add milk, do not add it until AFTER you have smashed all the other ingredients. If you do it before, you will end up with a weird consistency.

I like to make Pearl Couscous as a starch and then I toss it with mixed vegetables (I just use the frozen broccoli, cauliflower carrot and steam them) and add a little homemade vinaigrette and maybe a little sprinkle of Parmesan Cheese.

My boyfriend's parents are celebrating their 25th anniversary in a couple weeks and because Eric's sister has to go back to school this week and won't be around for the big day we are trying to do something this week. I suggested making a nice but elegant meal for them... and more likely than not I will be doing the planning and executing because these three just don't seem to be able to communicate well enough to get it together! Here are my thoughts, any suggestions are welcome:
Salmon - I'll use the spark recipe for Salmon with Summer Tomato Salsa Rice (probably brown with seasoning) Black Beans (his sister is a vegetarian) "Black Sunshine" - one bit of decadence in the form of chocolate lava cake
I might get another type of seafood as well but I'm not sure yet... I think I still want a green veggie or maybe a salad... I'll also pick up a nice bottle of wine.
