I like to cut up fresh fruit - apple, pear, peach, grapes, cantaloupe, and mix with fat free cool-whip. You can add a banana just when you are ready to serve.

Go to this food blog: Mandy Makes a Mess in the Kitchen. I LOVE the Skinny peanut butter brownie recipe on this page, it has greek yogurt and skim milk in it to make it a bit healthier! There is also another brownie recipe on this site that has black beans in it, that is just devine!

cream together fat free cream cheese, plain Greek yogurt then fold into sugar free instant pudding top with light cool whip, OR sprinkle in dry sugar free Jell-o, instead of pudding for a fruity flavored dessert.
This can also be put into a pie shell.
Seriously this is decadent....I fooled my sisters, they are dessert (esp chocolate) fanatics.
Just practice with trial & error to get what you want. I doubt you will ruin anything.

Peel and slice a few apples. Place in a fry pan with some Pam, sautÚ until soft. Add some sugar and cinnamon. Tastes like the inside of an apple pie. You can pour it on top of some fat free vanilla ice cream or frozen yogurt !

My crew likes the 5 Min Key Lime Pie recipe found on the Spark recipe site. You can change up the flavors to please your family's likes and it really only takes 5 min to make.

Junior Mint Brownies

Yield: 16 brownies (serving size: 1 brownie)

Cooking spray
1/4 cup butter or stick margarine
32 (about 3 ounces) creamy, small-size mints in pure chocolate (such as Junior Mints)
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
2/3 cup sugar
1/3 cup unsweetened cocoa
1 large egg
1 large egg white

Preheat oven to 350 degrees.

Coat bottom of an 8-inch square baking pan with cooking spray.

Combine butter and mints in a 2-cup glass measure; microwave at high 30 seconds or until soft. Stir until smooth, and set aside.

Lightly spoon flour into a dry measuring cup, and level with a knife. Combine flour, soda, and salt in a bowl. Combine sugar, cocoa, egg, and egg white in a large bowl; beat at medium speed of a mixer until well-blended. Add mint mixture; beat well. Add flour mixture; beat at low speed just until blended. Pour batter into prepared pan. Bake at 350 degrees for 20 minutes or until a wooden pick inserted in center comes out clean; cool completely on a wire rack.

Copabanana Cake

2 cups all-purpose flour
1 teaspoon each baking powder and baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup fat-free egg substitute, or 2 whole eggs
1/4 cup butter or margarine, softened
1 cup mashed, ripe bananas
1/2 cup low fat sour cream
1 teaspoon vanilla
1/2 cup mini chocolate chips


1. Preheat oven to 350║ F. Spray a 9 x 13 inch baking pan with non-stick spray and set aside.
2. In a medium bowl, combine flour, baking powder, baking soda, and salt. Set aside.
3. In a large bowl, beat together sugar, egg substitute, and butter on medium speed of electric mixer. Add bananas, sour cream, and vanilla. Beat again until smooth. Gradually add flour mixture to bananas mixture, beating after each addition. Batter will be thick.
4. Fold in chocolate chips.
5. Spoon batter into prepared pan and spread evenly using a spatula. Bake for 25 to 28 minutes, or until a toothpick inserted in center of cake comes out clean. Cool completely on a wire rack. Cut in 16 pieces and store in an airtight container.

Yes, it really DOES taste like a raspberry zinger!

Raspberry Zinger Cake

Servings: 16

1 (18 ounce) box white cake mix
10 ounces diet Sprite
2 egg whites
1 (3 ounce) box raspberry Jell-O gelatin (SF or FF)
1 1/2 cups boiling water
8 ounces Cool Whip
1/4 cup flaked coconut

Prep Time: 5 minutes
Total Time: 35 minutes

1. Take dry cake mix and add the 2 egg whites and soda. Mix well with electric mixer. Pour into ungreased 9x13 dish and bake as directed on the box. Let cool for 15 minutes.

2. Then take the boiling water and add the jello. Stir until jello is dissolved.

3. Poke holes into your cake with end of wooden spoon. Then pour jello mixture over the cake. Cover and refrigerate 2 hrs or overnight.

4. Spread on the cool whip and top with coconut.

Holy Cow Cake)
Better Than Sex Cake
(Diet Coke Cake)

Yields: 24 servings

Ingredients:
1 box Devil's Food Cake mix
10-oz Diet Coke or Diet Pepsi
1 egg white
6-oz fat-free caramel ice cream topping *
7-oz fat-free sweetened condensed milk
1 cup Skor Bar or Heath Bar bits (found by the choc. chips)
1 container fat-free cool whip

Directions:

Mix cake mix, egg white and diet soda. Bake at 375 degrees for 35 minutes or until toothpick comes out smooth in a greased 9x13 pan. During the last few minutes of baking, put caramel and condensed milk in a sauce pan and stir on medium low heat until smooth. Take cake out of oven, and poke holes all over the top. Pour caramel mixture over warm cake, filling in the holes. Sprinkle Heath bits over the top, reserving some for the top. Cool completely. Cover with container of fat-free cool whip and sprinkle with remaining heath bits. Put in fridge until ready to serve.

Yields: 24 servings

LDHAWKE98 Notes: I did not top the cake with Cool Whip. Instead I used all of the Heath Bar bits on top. As we eat it, we will top with our own Cool Whip.

OK, I'm not kidding. I am going to post some desserts for you and each one is amazing. Your kids will love them! Here's the first one:

Chocolate Eclair Cake

From the kitchen of LISACLEWISMAY. Posted on 9/25/2010

Servings | 16

Ingredients

1 Box Reduced Fat Graham Crackers
2 small packs sugar free instant vanilla pudding
4 1/2 cups skim milk
2 8 oz Cool Whip Free
1 small pack sugar free instant chocolate pudding


Instructions

Mix vanilla pudding with 3 cups of milk as per directions. Stir in 1 cool whip. Place 1 package of graham crackers in bottom of 13x9 pan. Top with half of the pudding, more grahams, rest of pudding. Top with last of grahams.

Mix chocolate pudding with 1 1/2 cups of milk then add second container of cool whip. Spread on top of graham crackers. Cover and refrigerate. Do not eat until the next day. The crackers have to get mushy.

Special Notes

A friend from WW gave this to me. It is kind of tiramasu like. My whole family loves it! You can also get creative changing up the pudding flavors.

Graham crackers with yogurt in the middle and freeze till hard
Package of crescent rolls sprinkled with cinnamon sugar or chocolate chips and bake
Cake mix using can pumpkin or apple sauce
Mini angel food cakes top with cool whip and strawberries
Banana dip in melt peanut butter and freeze
Banana slices dipped in melted chocolate chips and frozen
Baked apples with cinnamon topped with yogurt

I like the chocolate cupcakes from sp that are made with tofu. They taste like the crust of an ice cream sandwich. Frozen bananas in the food processor with a little chocolate syrup. Yummy ice cream substitution.

I have a few suggestions.

The first is Fresh Oranges in Red Wine Syrup ( http://www.epicurious.com/recipes/food/vie
ws/Fresh-Oranges-with-Spiced-Red-Wine-
Syrup-109087 ). I'm not sure if it's kid friendly--you could probably substitute reduced grape juice for the red wine syrup. If you don't go overboard on the syrup it's very healthy and it's got nice bright flavors.

Another option is Balsamic Strawberries ( http://www.epicurious.com/recipes/food/vie
ws/Balsamic-Strawberries-101368 ). This is another one with nice bright flavors. You could reduce the amount of sugar in this one without a problem.

And, if you have a Trader Joe's nearby, you might try their Vanilla Meringue cookies. They're only 25 calories each and provide a sweet ending to a meal. You could even serve these with pureed berries on top.

You must try the Pineapple Angel Food Cake (by DOCKERYLB) that's on the recipe site! Easy, easy to make and absolutely delicious! It's just one box of angel food cake mix and one can of crushed pineapple in juice. That's it! AND under 150 calories per serving. You can also add a little cool whip on the top for your kids, but I find that I don't even need it. And if you don't have a 9x13 pan you can always make cupcakes.

Hi everyone! I am in need of some amazing dessert for me to make! I have 2 kids and this whole eating healthy things is going ok, but they are missing their desserts because I can't find anything that doesn't completely blow our diet out of the water! Help :)
