I used to not like veggies because growing up they were always boiled or steamed and I just hated the taste.
I have found that I actually do like them, though prep depends on what type of veggie it is.
I like Spinach and kale raw or sauteed (in olive oil with garlic, salt and onion). I like cauliflower roasted or steamed and mixed with my mashed potatoes. I love broccoli lightly steamed (still crunchy) with a squeeze of lemon juice and salt. I will roast all sorts of veggies like cauliflower, carrots, squash and zucchini (toss them in olive or canola oil, salt, pepper and garlic).
I can hide them in sauces or smoothies (spinach, banana, apple and greek yogurt!). I can hide them in soups or curries (I really, really hate peas and carrots, but put them in with chicken curry and I can't even taste them). I will make salsas and pico ge gallo at home (seeded tomato, red onion, jalepeno, cilantro, red & green bell pepper, salt and garlic) and eat with eggs or chips or on tacos.
Last idea- cover them in something you like- cheese, gravy, tomato sauce, etc. I will cut up tomatoes, onions, peppers, etc., and toss them in my taco meet. My ex-husband never even knew his most hated foe (anything that was not meat, corn or potato) was in his food.
Just experiement and see what you can do.

As Heather said, there really is no alternatives to what you get from veggies.
If the problem is taste there are things you can try.
Sprinkle the veggies with a small amount of something flavorful like ranch dressing, parmesan cheese, balsamic, Worcestershire or apple sauce. It doesn't need to be swimming in it, but just enough where you mask the veggie taste.
Cut them up very small and hide them in something more flavorful. Put them in your spaghetti or stuff them in a chicken breast etc.
If the problem is texture - I would do a little research and see if there are site's or groups out there who might be able to help.
I think if you give yourself a chance you'll be able to overcome this.

I would think about why you are resistant to eating vegetables and if it is really all vegetables in all forms. Is it texture or flavor? Do different cooking methods matter? Are there particular vegetables you dislike more? Can you drink vegetable juice? Are there some forms of vegetables you tolerate but make don't think of as eating vegetables? I wouldn't force yourself to keep putting lettuce on a sandwich if it makes you gag but I would experiment. Vegetables are great but if you can't bring yourself to eat them try to eat plenty of fresh fruit at least.
My vegetable hating child eats tomato/vegetable sauce on pasta. She eats vegetables in soup or in lasagna. She loves fruit though and would eat any fruit. I despise canned vegetables but frozen or fresh versions of the same vegetable work for me.

I have totally the opposite problem - I can't get enough fruit and veges.
How do you go on soup? If you don't mind them, how about making some vege soups and use a blender or wizz stick and puree them.
You can do the same and add them to casseroles - cubed meat or some chicken.
THEN of course it may be the cooking method. Try a variety - steam, boiled in jacket, cooked and cold with a French Dressing or similar, cubed/roasted with a balsamic dressing, try adding plain yoghurt to certain things - like with very slightly steamed or blanched spinach with a pinch of nutmeg, or a vegetable curry.
Have you thought about adding them to some fruit and yoghurt and making a smoothie?
I have cooked many things, pizza included, that some would gag at if they knew what I put in them. e.g. - my pizza I make up a real thick 'sauce base' using carrots, celery, onions, capsicums, RED LENTILS, and a fair bit of tomato paste and some garlic and basil. I puree them up then add OAT BRAN until I get a nice THICK texture. The sauce is about 3/4 inch thick. I mix up finely chopped onion, red and green capsicum, spring onions, mushrooms, and add grated low fat tasty cheese to it and mix them all in. By mixing the cheese in this way you don't use as much and it sticks the veges together. My grandson said it tastes just like bought pizza, and altho' he knows what is in it, he won't normally eat half of the stuff in it. To top it off, each piece is a FULL serve of veges.
You may just need to think outside the box to come up with some good alternative methods. Also, it would be helpful to increase the various fruits - remember rainbow of colour - or are you going to say that you don't like fruit, too - LOL!

I'm not a veggie fan either and for the "omg you can't possibly hate all veggies" crowd, yes I have tried many kinds, many ways....but I digress....
What I've been doing of late is making smoothies with a mix of fruit, water, crushed ice and raw vegetables. Depending on whether it's a meal or a snack, I mix about 2 or three pieces of fruit like a banana and an orange or a cup of frozen berries with 2 - 3 cups of leafy greens like spinach, kale, dandelion, swiss chard, etc. I also sometimes add half an avocado and/or some flax seeds, a carrot, a cucumber, broccoli etc.
For the most part the fruit covers up the taste of the veg and since you can drink it, you don't have to force yourself to chew and chew and chew something you don't like. I find them surprisingly filling, so I generally make one 300-400 calorie smoothie one of my meals.
I do think it's a good idea to keep trying new vegetables, prepared in new ways. Taste buds change and you might find something you like. I can tolerate some veggies as part of a soup. I like mushrooms and spinach as a topping on pizza or pasta.
I always see chefs pureeing things on cooking shows, so if you're like me and you don't like the texture of veg, you might look up some recipes for purees. I know a few people who don't like cooked veggies, but learned to enjoy raw veg with a low calorie dip.
The Smoothie thing may not be "optimal" or the "best" solution for everyone, it works pretty well for me.

Saying you don't like veggies is a little like saying you don't like air. ;) There's so much of it you can't avoid it! So you don't like lettuce. I love veggies, and i'[m not a fan of iceberg.
There's such a HUGE variety of vegetables in all shapes, flavors and forms, with an infinite variety of ways to prepare them that it's impossible to say you don't like all veggies. You can't possibly have tried them all. ;)
There is no replacement for vegetables; nothing can relaly do what they do and provide the nutrition they do in the way they do. Most people's main exposure to vegetables is canned and boiled. And that's just about the least tasty way to get them!
So let's narrow this down. What specific vegetables have you tried, how were they prepared, and what about them did you not like?

Hey all, I'm a newbie and I'm trying to lose weight. I'm 27 years old and I just can't swallow veggies...I've tried and tried and tried to the point where I want to pull my hair out. Lettuce makes me gag just looking at it...and if there is a sliver in my sandwiches I can taste it...ugh.
Does anyone have any ideas on how to stay healthy even if you just can't literally stomach veggies?
