I like veggies too, but the trick for me is keeping them at hand! Packing a large container of raw veggies is what I have to do. If they are in front of me all day, I will keep eating them. Love the crunch and how full they make me feel. If I do get bored, adding a light ranch dip or hummus spices things up every now and then.

No tricks needed here as I loves my Veggies. So far today I've had two different types of peppers (Red & Yellow), Cucumber slices, Celery sticks, cooked and raw Carrots and mashed potatoes.

new favorite meal when it's too hot too cook - spread hummus on a Flat Out wrap, add a pile of spring mix salad greens, roll up and enjoy. Maybe add some red/yellow/orange pepper strips or Vidalia onion

I love Vietnamese salad rolls--both the kind that are wrapped in rice paper and the kind wrapped in lettuce. They are very good with a peanut-sauce dip.
I really need to learn how to make these!

Great idea- sounds delicious! I like to make a stir fry to get a variety of veggies (also helps clean out the fridge!).
