I like those soups too, but I'm not allowed to have them any more because of the sodium. To get my Campbell's Tomato soup fix, I heat up v8 low sodium juice (50cals/cup) with some garlic powder, and maybe some cheese or frozen veggies depending on my mood. It works in a pinch and I don't feel bloated afterwards. It's actually what I just had for a snack-- .75 cup low sodium v8 and .25 shredded cheese came out to 138 calories.
I got this at a Weight Watchers Meeting . 50 calories per cup.
Vegetable Minestrone Soup Recipe for your CrockPot
2 14.5 oz cans fat free vegetable broth 1 18 oz can crushed tomatoes un-drained 3 medium carrots, chopped 3 small zucchini, cut into 1/2" slices 1 medium yellow bell pepper cut into 1/2" pieces 8 medium green onions sliced 2 cloves garlic finely chopped 2 cups shredded cabbage 2 teaspoons dried marjoram 1 teaspoon salt 1/4 teaspoon pepper 1/2 cup cooked brown rice 1/2 cup Cannellini beans 1/4 cup chopped fresh basil
Mix all ingredients except rice and basil in a 3 1/2 to 6 quart slow cooker.
Cover and cook on low heat setting for 6 to 8 hours or until vegetables are tender.
Stir in rice. Cover and cook on low heat setting for about 15 minutes or until rice is tender. Add basil when soup is done.
I am sure you can add whatever veggies you like to this.
I'm sure you've all seen the Progresso and Campbell's soups that have 50-70-100 calories/serving, which is half a can. I LOVE those soups, and they are perfect for me for lunch. I've tried to find recipes that recreate them, any of them, with the same calorie range but no such luck. Does anyone have a copycat recpie, or any good soup recipe, within these calorie ranges?
