I love to have a whole wheat tortilla (the small ones, I think they are 8 inches?) spread with 1 Tbsp of dijon mustard and layer with 3 ounces of sliced lunch meat (turkey is my favorite) then add your favorite fresh veggies, I usually have baby spinach, bell peppers, chives, and tomatoes. Roll up and eat as a wrap or slice into pinwheels. This is under 300, so you can even add some cheese if you want.
Another favorite, orowheat came out with these great multi-grain sandwich thins - a whole one is only 100 calories, I top with a half a tablespoon of boboli pizza sauce, 1/4 cup of shredded part skim mozzarella cheese and some chopped bell peppers, onions, and mushrooms. Bake long enough to melt the cheese and enjoy with a salad. This one is about 260 calories with a light done right vinaigrette, plenty of room for some fruit for dessert.
One last one from me, 1 cup of 1% cottage cheese with some raspberries (about 10-12) and a packet of truvia mixed in, a handful of baby carrots, and a slice of roman meal whole wheat bread, toasted. Then 1/4 of a cantaloupe or a bunch of grapes (frozen) for dessert.
In the summer, I love a big salad, loaded with veggies, fresh fruit, and some grilled chicken on top. Yum!

I just ahd a great lunch, 1/2 a toasted whole wheat pita w/ tomato,a little cheese and one morningstar black bean burger. Less than 300 calories and fabulous!! A navel orange after makes the perfect dessert!
I do use frozen lunches as a last resort but prefer bringing in thing I have left from healthy recipes I have tried. I also make a few dishes over the weekend to use as lunches (often things the family won't eat). Chicken stir fry is easy and with some added fruit is one. Here is today's lunch:
