Hi there!... my church challenged us to start a healthy habits year, to keep a strong spirit as well as a strong and healthy body. We are doing a 21 day vegan diet to start off the year and will continue throughout the year eating healthy. I loved the stir fry idea, I am going to try it for lunch today....
I decided as a nice kick-start to a healthy new year I'd challenge myself to do 30 days of eating vegan. Actually, I'm doing 31 days because I'm going to try to stick with it for all of January. Is anyone else giving this a shot? I'm two days in and so far, so good... For dinner tonight I made a stir-fry of mushrooms and celery, and used up some leftover rice. It was filling and tasty. As a snack I had some almonds... I also drank a TON of green and black tea (with Splenda).
