I completely feel your pain and live in Florida as well, and yes, people down here still cook with lard... old school cooking will kill you down here. I can only tell you what I do as my parents have retired and moved into my home so we didn't have the expense of double upkeep anymore. So I cook them whatever, or mom cooks, and I have a nice LARGE salad with some of the meat from the meal, or I add baked chicken breast or something. And there are times when I will eat what they are having (meatloaf, especially) and go back on plan the next day. And be sure to check out the PORTION DISTORTION articles as they will help you without you having to weigh every single thing you eat.
I have lost 50 pounds in 8 months, but I have been walking at LEAST 3 miles a day now (I started with .2 miles and slowy increased it until 3 miles is comfortable, and sometimes I do pull off 5 miles). So the walking is VERY healthy, but don't forget to add in strength training too. It will be a long road, but you have done this before and you can do it again. I promise that if you commit, you WILL do this.
