I did May 22nd's challenge :) QOTD: I enjoy the outdoors except during this time of the year. *SNEEZE* stupid alergies. But I love bike riding and play out doors with the kids and a nice stroll.

I finished my Tuesday's challenge! 
My Tuesday recipe - Low Fat Egg Salad 1 cup (8 ounces) Egg Beaters (or similar product) 2 TBSP fat free or light mayonnaise 1/4 cup finely chopped celery 1 tsp paprika
Spray small microwavable dish with cooking spray. Add Egg Beaters. Microwave on HIGH 1 minute; stir with fork. Microwave on HIGH an additional 45 seconds, or just until center is set. Place cooked Egg Beaters in medium bowl; toss with fork until broken into bite-size (crumbly) pieces. Let stand for a few minutes, or until cool. Add mayonnaise, celery and paprika and mix well.
Chill egg salad in fridge for about 2 hours. Makes 4 servings.

I'm currently eating a great dinner - SparkPeople's Black Skillet Beef with greens and potatoes. Definitely recommend it! You can search on my recipe for today.
Favourite outdoor activity is hiking - I'm off to take the puppy in a few minutes!

Danielle, what if you used sugar free jello, that would cut down on the calories and you could enjoy a few more grapes. My allergies are doing me in today, but I still managed to get today's challenge done. My favorite outdoor activity would be shooting hoops with my family, or playing kick ball with the kids.
My Tuesday recipe: This came from my lastest Fitness magazine BBQ Chicken Pizza 1 samll red onion, very thinly sliced 1 t. canola oil 1 (10 oz) package prebaked thin plain or whole-wheat Italian pizza crust (such as Boboli) 1/4 c. spicy or tangy bbq sauce 8 oz. precooked boneless, skinless chicken breast, thinly sliced 1 1/2 oz. shredded Gouda cheese (about 1/2 c. shredded) 1/4 c. cilantro
Heat grill to medium high heat. In nonstick skillet over medium high heat, cook onion in hot oil for 5 minutes or until lightly browned. Season with salt to taste. Spread crust with bbq sauce. Top with sauteed onion and chicken slices, then sprinkle with cheese. Place pizza over direct heat on grill for 1 to 2 minutes, or until crust is lightly charred. Move to the side and grill indirectly, with cover down, for 5 minutes, or until cheese is melted and chicken is hot. Sprinkle with cilantro.

| I finished my challenge for last Thursday May 18th and was sick from friday till yesterday. I'm glad to be filling better and am looking forward to todays challenge. I like to take evening walks with my two boys.

Tuesday Recipe: (I don't think this is *too* unhealthy, provided you don't OD on them!)
Frosted grapes - 2 pounds seedless red grapes 1 3-ounce package cherry JellO
Rinse grapes well. Roll damp grapes in gelatin to coat. Place in refrigerator for at least 1 hour for gelatin to set.
*I made these for a party & they were a HUGE hit. I assume you can use any flavor of JellO you'd like, but a "red flavor" will make the grapes look the prettiest. I'd also imagine that green grapes with lime, lemon, or pineapple JellO would look nice. They are REALLY yummy (and therefore difficult to stop eating!), and best when cold. **Oh, one thing I found to be easier: I would sprinkle some of the JellO onto a dinner plate, then roll a handful of damp grapes in that to coat (by kind of shaking the plate side-to-side). After a few handfuls, you need to add more JellO. This was much easier than what I first tried: rolling each grape individually.

| I love doing so many things outdoors, but rollerblading, bike riding and swimming are my top 3. Summer is my favorite season and I'll be doing these 3 activities all summer long!

I have answers for the last few questions of the day... I really enjoy those! Here goes:
Fav. Floor exercise~ anything yoga involved. I'm even getting better at the planks, but I need to strengthen my wrists more!
Changes since being accountable~ Well I feel like I'm letting more people down than just myself. I've also found that I'm working in some form of cardio more often. I have been taking the stairs down from the parking garage and walking across the street to my work building instead of taking the airwalk like usual, which adds up!
Fav. veggie/salad dressing~ I LOVE zucchini! I just discovered how much I like it recently, and luckily my husband loves it just as much, so I think we'll be having a lot more of that in our diets. I also love seasame/ginger dressing, like you get in Japanese resturants. I found a good brand, wishbone I think it is, for at home.
Fav. Outdoor activity~ My family and I play volleyball a lot and those are always good times.

CHALLENGE OF THE DAY: 20 Supermans, 20 Straight Leg Raises, 25 Dumbbell Flys, 10 Wall Push-Ups, 30 Lying Ham Curls, 20 Minutes Walk/Jog/Run, and 64 oz. Water.
QUESTION OF THE DAY: What is your favorite outdoor activity?
ANSWER: I love walking in the woods or by the water. I also love biking, playing volleyball, and I LOVE fishing although that's not really an activity but at least it's outside. :-p

Good Afternoon Everyone!! I hope you're enjoying your day so far! Awesome job on the challenges everyone! You're awesome encouragers and motivators! :o) Guess what today is?? RECIPE TUESDAY!! Yay! We all get to share a healthy (or naughty) recipe that we love. :) Wise, thank you for your kind words about getting tons of stars! :) That eggplant recipe sounds really good and I don't even care for eggplant. :-p I will definitely have to try that this weekend. You're going to have a blast on your trip to Sante Fe! We'll miss you....

 MommaK, that's so wonderful that people are commenting and noticing that you're toning up! Woohoo! :) I went and got my hair cut last Saturday and my hairdresser hadn't seen me for a while and she said oh my gosh, you look so skinny and beautiful! I had a huge smile and said thank you very much. I thought about this challenge when she said that and I was like yay! It's really working! :) Mic, that sounds like so much fun! I wish I could go bike riding too, lol. :o) I have a brand new bike that I've never even used which is a shame... I would love to go to a trail with my friends or family sometime. It would be nice to do that EVERY Saturday. :) Danielle, SUPER job on getting all of those stars!
