| Thank you. I probably would have started backwards. Put the tofu in first, then the brown rice, and last the broccoli. Somehow I'm supposed to get cabbage in there?? That just doesn't sound that appealing, but neither did the eggplant dip and I ended up loving that.

Tofu is awesome!
A lot of people will marinate tofu in whatever flavor they are cooking with. Sometimes people are put off by the mushy texture of tofu chunks, so if you prefer something a little more "meaty," then freeze it overnight and thaw it out again.
It's also good lightly dusted with all purpose flour or potato flour and fried lightly. I like to cut my tofu into long slabs and do this, then add to a stirfry or salad or stuff it into a pita with some veggies and hummus.
You can also marinate and bake it.
Silken tofu (comes in a rectangular milk carton-like box as opposed to a chunk just swimming in water) is a completely different texture and a lot of people use it for spreads and smoothies and desserts. It makes a mean chocolate mousse, let me tell you!
ANYWAY, as far as the stir fry goes, get your biggest pan or wok smokin' hot, add whatever the recommended oil/fat, and toss in your vegetables. Start with the hardest ones that will take longest to cook (carrots, broccoli, cabbage) and work your way down from there. I usually add tofu in last because I don't want to break it up too much by stirring. Whatever you do, don't walk away. Keep that stuff moving or it'll burn! If your pan/wok is properly hot it shouldn't take more than a few minutes.

tofu is soy bean curd.. it's white and is pretty flavorless... it does, however, take on the flavor of whatever you are cooking it with.
it comes in a few different textures.. extra firm is probably the best to use for stir fry - less firm (and my mind is blanking on what the other textures are called) are great for smoothies, or desserts...
Tofu is pretty easy to cook with, you just cut it into chunks or slices and use it however you would use meat - only it's more fragile than chicken is so it requires less cooking time.
First time I tried it - I honestly hated it it was really bland - but i tried it again using a really flavorful stir fry sauce (with chilis) and I really liked it.

I'm trying to do the meal plans and one day has a Tofu Stir Fry. It gives the ingredients, but no directions like the other "needs preparing" meals. I've never bought Tofu before and I have no idea what to do with it.
Help me please. I'm really trying to stick with the meal plans.
